Ok – between you and me, I chose biscuits this week because I had heard that someone on this Saturday Bites group was intimidated by them. What’s the best way to overcome that fear? TRY IT! I’ve used many biscuit recipes in the past with successes and failures, but this recipe came together easily and had a beautiful rise. The sheer joy in my heart when I turned on the oven light to check on them only to find them three inches tall made this whole challenge worth it. The trick to biscuits is using ice cold butter and limit the use of your warm hands when mixing. I used my food processor to blend the butter and dry ingredients (the same way you do for a pie crust) into small pebbles. From there, you add your liquid. These cook at a high temp, but the slow melt of the ice cold butter is what causes the layers in the pic below. Top them with melted butter for a gorgeous glow. I ate these with Homemade Strawberry preserves. The leftovers were turned into Bacon, Egg, & Cheese Biscuits. Who needs McD’s when you’ve got biscuit skills??????

So best laid plans. I originally planned on baking these, but by the time I finished the pot of chicken without the dumplings I was pretty beat down so I ended up putting them in the pot and steaming them with the stew. According to the hubs it was all pretty delish.

Biscuits are delicious, no doubt about that. I think my favorite biscuits are the Cheddar Bay Biscuits from Red Lobster, but I already made a copycat version of those in a previous challenge. I didn’t have the patience for kneading or rolling dough this week so I looked for a drop biscuit recipe and found this one. They are good, but the raspberries and the icing make them that way. I think next time I will add more lemon zest to the sugar!

This biscuit recipe is simple, and turned out exactly as I hoped. I served them with sweet Italian sausage and white peppered gravy on top. Result = happy husband!!

Red Lobster Cheddar Bay Biscuit but Better
was a little intimidated by this challenge, but happy I tired to make some biscuits. I had to watch a YouTube video to make sure I did this right. Let me tell you, your house will smell so good while making these! I didn’t have Old Bay, nor did the grocery store. I also forgot to do the folding step with the dough. Couldn’t even tell. Wow! These are delicious! Just look at that beautiful cheese. Very soft on the inside and a little crunchy on the outside. Just wonderful. I just love when a recipe is a success! Happy Saturday indeed. 😀
