Saturday Bites – 4th Annual Chili Cook-Off

This week’s is our 4th Annual Chili Cook-off. Where we challenge everyone to bring on their best pot of chili.

To celebrate our 4th annual chili cook-off, my work buddy and I made ourselves a nice pot of chili. Nothing fancy, just good ole fashioned chili with meat and beans. The way it was meant to be. We served it over a bowl of rice and sprinkled some shredded cheddar cheese over it.

Mexican Chili with Green Chile Cornbread

WOW! 4th Annual!! I wanted to try something different this year as I’ve already done the traditional chilis and white chicken chilis and pumpkin chilis. Walking with my friend one morning, she mentions her Green Chile Cornbread. It sounded like a fluffy corn soufflĂ©. I asked her to describe the recipe to me and voila! My inspiration for Mexican Chili was born. Instead of tomato juice, this recipe uses Red Enchilada Sauce. It is very meaty with beef and beans. Next time, I’ll add a bell pepper to it. The cornbread was the most delicious complement soaking up with enchilada sauce. I topped the chili with guacamole and Mexican Crema. We will be making this again!
