Saturday Bites – New Years 2022

This is our 2021 rolling into 2022.

I can’t speak for anyone else, but 2021 was a great year for me. Did we have some heartache and not so great times? Yes, yes we did. But on December 31st I was still praising God for all his blessings. In good times and bad times.

As for food. I use Saturday Bites as an opportunity to switch it up, try something new and different. 2021 was no different. Chimichurri was brand new to me and it was a great new find especially as an accompaniment to grilled meat. Peanut butter frosting is a favorite of the husband, up until last year I never attempted to make it. It’s hard to compete with childhood memories. FYI, it turned out perfectly. We finished up our year hosting an appetizer party for family and friends. Yummy cookies and a festive charcuterie board.

What a year! To many, this was a tough year. But when I look back at my photos, I’m reminded of how special the year became!

“Sometimes you will never know the value of something until it becomes a memory.” – Dr. Seuss

Dr. Seuss couldn’t be more right. I remember making a Chocolate Chip Cookie pizza with my 15-yr old son just for fun. So simple, but we really enjoyed eating cookie pizza and admiring our work. Or Matt and I spontaneously stopping at a car show we were passing while running errands then finding an Emergency Donut Food Truck at the show. YUM! Or zesting over 40 lemons my good friend gave me to soak in vodka only to forget about it in the pantry all year long. Best Limoncello! All the breads I challenged myself with this year – Challah, Ciabatta, & Focaccia. The many hikes we went on with my brother-in-law who has moved back out West. Oh! And all the cakes I made this year. Yummy AND Beautiful! I tried new techniques. Failed at some but excelled at others. Hosting Easter dinner with the whole Hays clan and later enjoying Thanksgiving with them too. I thank God that we had Green Bean Casserole! 😉 Hours spent floating on the pool with my friend listening to music & toasting to our unique friendship. Family Reunions in May and July! I drove through Aspen straight to the Top of the Rockies! We taught our son how to drive this year, and my imaginary brake is still saving the day. Soccer games, dog walks, vacations, and more. This year was nothing short of SPECTACULAR! May 2022 bring more adventures and good health! HOLY COW! It’s 2-0-2-2!!!!

With one in elementary school and a new little one Zane’s 2021 was very busy, but is hoping to get back into it.
